Here in the Super Delicious column, I’ll be reviewing a new healthy recipe or meal once a week. If you have any suggestions – and it’d better be super freaking delicious –let me know in the comments!

This week we’ll start with something easy to make, because I like you. It’s a frozen dinner – you cannot possibly mess this up…keep in mind that isn’t a challenge.

THE MEAL: It’s from a brand called Smart Ones, and it’s the Santa Fe Rice and Beans. A little background on this brand: it’s basically the brand for people on Weight Watchers. It has the point value on the side of the box, if you watch that stuff, but it basically runs on the premise of portion control (which I’m all for). It definitely won’t fill up your whole plate, but you can put some veggies or a salad beside it and it ends up being a pretty good meal.

THE PREP: It’s a frozen meal. Lift the corner of the wrap, stick that puppy in the microwave for 3 minutes, stir, and then put it back in for another minute. Easy as pie.

THE TASTE: So, I love Mexican. If I could eat nothing else, I’d bury myself up to my neck in nachos and be a happy little camper. I’d also suffer from some severe burns, but I would deal with it. That’s how much I love nachos. That being said, for a healthy meal, this is pretty good. There’s cheese some kind of sour cream type sauce on top. Not spicy, but that’s easily rectified with your favorite hot sauce. Again, not a huge portion, but having it with a salad isn’t half bad. You could even stick this on top of a bed of baby spinach or something, and then it’d almost be like there was no salad at all. Not as many beans as I would like, but there are a fair amount. Enough to warrant the name, I guess.

THE VERDICT: It’s pretty super delicious. It’s definitely a good fall back meal if you don’t want to cook, or are afraid of burning something down. It gets the SUPERDELICIOUS seal of approval.
